Serves: One 8 inch cake
Want to impress your best friend with a fancy looking cake for his birthday? This is the cake for you then. The sheer beauty will definitely blow the minds of your guests and the tasty will have them craving for more. The icing on the cake is the fact that this is completely eggless.
INGREDIENTS:
The vanilla cake:
1.5 cups flour
4tbsp sugar (more or less according to your taste)
100gm butter
1.5 tin of condensed milk
1.5tsp baking powder
2tsp vanilla essence
8-10 oreo biscuits crushed
The chocolate cake:
Same as above just replace 0.5 cups of flour with cocoa powder instead
The icing:
Red and blue food colour
6 oreos halved
The chocolate ganache
200gm dark chocolate
1.5cup cream
The sugar syrup
100gm sugar
2cups water
1sachett of coffee powder
METHOD:
- For the cakes cream your butter and condensed milk till light and fluffy. Add sugar and whisk some more.
- Sift your flour and baking powder (and cocoa powder for the chocolate cake) and add them to the mix portions at a time.
- Add the vanilla essence, and crushed oreo biscuits and beat till you get a ribbon like consistency when you pull your beater away from your batter. Do not overbeat after adding the flour.
- Pour the chocolate and vanilla cake batters into respective greased microwave proof containers. Bake at 60% (medium high) for about 13 minutes. All microwaves are different so keep checking from the 10 min mark bring out your cake after a tooth pick inserted into the centre comes out with very few bits of cake. If you take it out after the tooth pick comes out absolutely clean the cake will get overcooked with its own heat after brining it out.
- Cut your chocolate and vanilla cakes into equal halves and spray your sugar syrup over each piece.
- Beat your cream till stiff peaks and put portions of it between each layer. The bottom most layer is chocolate, followed by two layers of vanilla and finally ending with another layer of chocolate cake.
- Crumb coat your cake. It means apply a thin coat of icing over your cake and put it inside the freezer for 5 mins.
- Take it out and generously coat it with the icing.
- To prepare the ganache, chop your chocolate and add the cream in a microwave safe bowl. Cook it in the microwave in 30 second intervals stirring in between every interval, till the chocolate is melted. The ganache should be viscous and not too runny. Apply the ganache over your cake to create the dripping effect.
- Take your red and clue food colour and mix with your whipped cream to form a purple icing. Add dollops of it on the top of your cake in a circle and garnish with halved oreos.
- Serve and watch your guests be amazed.
Tips:
You can change the colour to any colour you like. You can replace the vanilla part and make it entirely chocolate also. Do not overbeat the whipped cream or it will split to give butter.
I used Delight heavy cream. It is already sweetened and flavoured, so I could directly whisk to prepare my icing. You can use any heavy whipping cream and add icing sugar while beating to obtain your whipped cream.
