Time: 15 min + 4 hours refrigerating
This sweet, pink Oreo cake is perfect for summer parties. It is both simple to make and very pretty. No baking required! Enjoy with friends on a warm summer’s day.
INGREDIENTS:
For the Base:
175 g Oreo cookies
50 ml milk
½ oil
For the filling:
1 gelatine leaf
250 ml whipping cream
200 g quark or sour cream or greek yogurt (milk, vanilla or citron flavoured)
½ - 1 tsp grated citron peel
2 tsp vanilla extract
100 g sugar
200-300 g strawberries
50 ml water
For Decoration:
175 g Oreo cookies

METHOD:
1. Crush the biscuits and add milk and oil. Mix evenly.
2. Line a tart tin (22 cm) with baking paper and press the mixture into the base.
3. Soak the gelatine leaves in cold water.
4. Whisk cream and add quark, grated citron peel, vanilla extract and sugar.
5. Squash the strawberries and add to the mixture.
6. Heat water, squeeze cold water out of the gelatine leaves, and add the leaves into hot water.
7. Mix the gelatine water mixture with other ingredients.
8. Pour into the tart tin and place into the fridge for a few hours.
9. Decorate with strawberry slices and Oreos.
TIPS: Alternatively decorate with sprinkles. For vegetarians, you may substitute Gelatine with Agar Agar.
**If you do not get a milk/vanilla/citron flavoured quark or sour cream, simply add in vanilla essence or citron flavouring of your choice.
