Serves: 6 adults
Everyone loves the good ol’ Chocolate Mousse and Mango Mousse. But believe it or not, Grape Mousse is so tasty that it can give a good competition to the veterans. Uncommon, delicious and unique, you will surely impress your guests with this delectable variant to the well known mousse.
INGREDIENTS:
1. 1 liter bottled grape juice (I used Real)
2. 4 strands agar agar
3. 600gm whipping cream
4. 500gm white chocolate
5. 50gm butter
6. Grapes for garnishing
METHOD:
1) Take a heavy bottomed pan and add the grape juice. Let it come to a boil and then add sugar.
2) On a double boiler melt the chocolate and butter and add this to the grape juice mixture.
3) Add in the agar agar stir till it dissolves. Once dissolved turn off the heat and let it come to room temperature.
4) In the mean time whip your cream using a whisk or blender till stiff peaks form. Do not over whip as that will make the fat split and make butter.
5) Keep this whipped cream in the refrigerator.
6) When the grape mix is cool fold in the whipped cream.
7) Pour this mixture into your serving containers and refrigerate for at least 2hrs or until they are set.
8) Garnish your mousse with fresh grapes and a mint leaf.
TIPS: Needless to say this recipe is open to variations. You can try this with strawberry or any other fruit you like.
