Serves: 12-14 cupcakes
Chocolate cupcakes are my all time favourite! Soft, moist, chocolaty and delicious, these cupcakes can make anyone’s day! Bake them for your family, birthdays or decorate them cutely and gift! This recipe is inspired by my all time favourite baker Martha Stewart’s recipe. I’ll upload a tested eggless Chocolate Cupcake recipe soon. Meanwhile, you may try this out!
INGREDIENTS:
1. 175g flour
2. 2 tsp baking powder
3. 75g cocoa powder, unsweetened
4. 1 stick of butter, softened
5. 300g fine sugar or caster sugar
6. 2 eggs
7. 150ml of milk
8. 1-2 tsp vanilla essence
9. A pinch of salt
METHOD:
1. Preheat the oven at 180 degrees Celsius. Butter or oil the cupcake tins well and keep aside.
2. In a large bowl, combine flour, baking powder, cocoa and salt and keep aside. In another bowl cream the butter and sugar. Once the mixture is nice and fluffy, beat in the eggs and add in the vanilla essence.
3. Combine flour and milk alternatively into the egg mixture, and mix well.
4. Pour the batter into the cupcake tins about 2/3rd full.
5. Bake for 20 minutes or till the skewer comes out clean.
6. Let it cool, serve with your favourite icing and decoration.
TIPS: Once the cupcakes are completely cool, ice them with your favourite icing and decorate with sprinkles and shredded chocolate.
