INGREDIENTS:
2 and 1/4 cups all-purpose flour
4 teaspoons baking powder
1/2 cup crunchy peanut butter
1 and 1/2 tablespoons sugar
2 large eggs - beaten
2 cups milk
1/4 cup vegetable oil
1/4 teaspoon salt
Melted butter
METHOD:
Preheat a waffle iron to medium-high heat. Mix the flour, baking powder and salt in a bowl. In a separate bowl, mix the peanut butter, sugar, eggs, milk and oil. Add this to the flour mixture.
Brush waffle iron surface lightly with the butter. Fill a medium-size ladle (or 1/2 cup) with batter and pour it onto the waffle iron. Cook until the waffle is golden brown, approximately 2 minutes.
Serve hot with maple syrup and butter or jam and fresh berries.
