Love Phirni? Then you must try this out. This is a new take on the traditional Phirni- this recipe combines two delicious flavours- coffee and vanilla. It is very easy to make, it takes a little bit of time to make because each layer of Phirni has to be set in the refrigerator, but let me tell you the end result will be worth it!
INGREDIENTS:
1.500 ml milk
2.3 tablespoon any type of white rice(I used basmati)
3.Small cinnamon stick about 1/2 inch (use just a little to bring the flavour so but not to overpower the vanilla)
4.Sugar(As per your taste- I don’t like it too sweet so used about 50 mg sugar)
5.1 tbsp vanilla extract
6.1 1/2 tbsp coffee powder
For Garnishing:
1.1 gulab jamun
2.Roughly crushed cashews, pistachios and groundnut
METHOD:
1.Rinse the rice and soak in water for an hour or two, then put it in the mixer with little water, grind it to a fine paste.
2.Boil the milk.
3.Take about 2 tbsp of warm milk in 2 separate bowls each; in one mix the vanilla extract and in another mix the coffee and set aside.
4.Boil milk in low heat for 15 to 20 mins, then add the rice paste slowly in low quantity- put a little and stir and always keep the flame in low.
5.After adding the rice paste in the low flame add the sugar and cook it for another 10 to 15 minutes, while stirring occasionally (keep on stirring otherwise the rice will form a lump).
6.In other pan toast all the nuts, then roughly crush it and keep it aside.
7.After you find that the milk and rice has come to thick consistency, divide the total mixture equally in the two separate bowl in which vanilla and coffee were kept and stir it till well combined.
8.Now take small serving bowls and put some coffee flavoured phirni in the bottom and refrigerate it for some a while till it has becomes firm having an ice cream like texture.
9.Now put the vanilla flavoured phirni on the top and put it back in the fridge till it sets.
10.Before serving cut the gulab jamun (hot or cold as u prefer) and place it in the top of the frozen phirni and sprinkle the crushed nut on top and serve.
TIPS: You can use any coffee powder- I used Nescafe Instant Coffee Powder.
