INGREDIENTS:
- 250g mushrooms, halved
- 3 tomatoes, chopped finely
- 1 onion, chopped finely
- 1 capsicum, chopped finely
- 100g sweet corn
- 1 tsp ginger garlic paste
- 2 green chillies, chopped
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt as per taste
- 1 tbsp oil
- Chopped coriander leaves (optional)
METHOD:
- In a pan, heat the oil. Saute onion till translucent. Add the green chillies and ginger garlic paste and mix well.
- Add the chopped tomatoes and capsicum and let it cook through. Add red chilli powder, turmeric paste, garam masala powder and salt to taste and mix well.
- Add the corn and mix well.
- Take off heat and serve with roti or praranthas.
TIPS: With my spicy meals I pack a salad! This goes really well with my pomegranate and apple salad. In a bowl add pomegranate, sliced apple, sprouts and cucumber. Add some chat masala and toss. Add a dash of lime and pack it in your lunch bow! Simple!
