Quesadilla is a Mexican dish which involves a delicious filling inside a tortilla wrap. The smooth cheese and crunchy corn wrapped in beautiful soft tortillas is a delight to eat. Incidentally, you can make other fillings of your choice and make your very own creation! Make sure you serve hot, immediately or else the tortillas will become soggy. Have it with your favourite Mexican dips! I had it with tomato salsa and sour cream.
INGREDIENTS:
- 4 tortilla wraps
- 1 cup American Sweet corn
- 1 cup grated cheddar cheese (You may use parmesan, mozzarella or goat cheese)
- 1/2 cup finely chopped red bell pepper
- 2 tsp red chili powder
- 2 tbsp coriander finely chopped
- Pepper to taste
salt to taste
METHOD:
- Preheat the oven at 180 degrees Celsius.
- Spread one tortilla wrap and spread a handful of corn and red bell pepper. Add in a tbsp of coriander. Season with red chili powder, pepper and salt as per taste. Then, sprinkle a handful of grated cheese. Place another tortilla wrap over this. Repeat for the next.
- Place the wraps in the oven for 2-3 minutes or the cheese melts. Make sure that the wraps do not burn or harden.
- Serve hot with your favourite dip!
TIPS: Have it with salsa or sour cream dips. The acidity of these dips cuts through the sweetness of the corn and richness of the cheese and complements the dish in its entirety.
