I’m a big fan of Italian cuisine, and needless to say pasta is my favourite thing about Italian food. Whenever I’m alone at home, I cook myself a plate of Pasta. I particularly love Penne in white sauce- the creaminess from the milk and cheese is absolutely heavenly. The best thing about this is you need to follow three steps- Boil the pasta, add in your favourite vegetables or meat and make the creamy white sauce. The only tough part about the recipe, I would say, is to get the right thickness and consistency of the sauce- you don’t want it too dry or too runny. I’ve used Penne, but you can use any pasta of your choice.
INGREDIENTS:
1.2 cups Penne Pasta, boiled
2.½ cup sweet corn kernels, boiled
3.½ cup mushroom, sliced
4.1 tbsp flour
5.2 tbsp butter
6.1 tsp finely chopped garlic
7.2 cups milk
8.2 tsp oregano
9.1 tsp red chili powder or chili flakes
10.½ cup grated cheese
11.Pepper to taste
12.Salt to taste
13.1 tbsp oil
METHOD:
1.Heat oil in a pan add the mushrooms, corn kernels and salt and cook them through. Keep aside.
2.Heat butter in the pan. Add garlic and sauté. Add the flour and keep stirring it for seconds.
3.Add the milk slowly while continuously stirring the pan and cook till you get a nice thick sauce.
4.Add three-fourth of the cheese, oregano, pepper, chili powder and salt and combine everything well.
5.Add in the boiled pasta and cooked vegetables and cook for another 2-3 minutes.
6.Take off the heat and serve in a plate. Garnish with the remaining grated cheese, oregano, chili flakes and serve hot.
TIPS: While making the dish, I’ve only used corn and mushroom, but you can add any vegetable of your choice- carrots, capsicum, artichokes- absolutely anything! Non-Vegetarians may add sliced sausages or bacon or lightly sauted shrimps!
