I’ve been trying out a lot of fusion dishes recently and this dish is one of those! I love Chinese and Italian flavours and I thought of combining those two and making this tasty Schezwan Pasta dish. It is really easy to make- chop in your favourite vegetables or meat and add Schezwan sauce. I love Ching’s Schezwan Chutney. You can also make Schezwan Chutney at home but to reduce time, I suggest you use pre-packaged Schezwan sauce available in the market. This is spicy and lip-smacking delicious!
INGREDIENTS:
1.300 g pasta (I used Penne)
2.½ cup finely chopped carrots
3.½ cup finely chopped capsicum
4.1 onion finely chopped
5.3 tbsp tomato ketchup
6.2-3 tbsp Schezwan Chutney
7.½ tsp oregano
8.½ tsp red chili flakes
9.Salt to taste
10.Black pepper powder to taste
11.3 tbsp oil
METHOD:
1.Cook the pasta al dente as per instructions in the packet.
2.Heat oil in a pan. Add chopped onions till translucent.
3.Add the carrots and capsicum and stir fry. Add salt and pepper to taste.
4.Now add tomato ketchup and schezwan chutney and mix the vegetables.
5.Add the cooked pasta and everything well.
6.Garnish with oregano and red chili flakes and serve hot.
TIPS: If you have spring onions at home, chop 2 bunches of spring onions finely and all it to the dish to make it more flavourful.
