Vanilla cupcake is nothing but using a vanilla cake batter and putting it into cupcake moulds. Vanilla cake and vanilla cupcake, chocolate cake and chocolate cupcakes, red velvet cake and red velvet cupcakes are same batter recipes with no variation between the cake and cupcake batter.
INGREDIENTS:
- ½ cup flour
- ¼ castor sugar
- 2 medium sized eggs
- 2 tsp vanilla extract
- 5 tbsp butter, softened plus extra for greasing
- ½ tsp baking powder
- ¼ cup milk
- A pinch of salt
METHOD:
- Preheat the oven at 180 degrees Celsius. Grease the cupcake mould with butter and cupcake liners.
- In a large bowl, mix the butter and sugar till creamy. Whisk in the eggs and vanilla extract till smooth.
- In another bowl, place the flour, baking powder and salt.
- Now mix half of the dry ingredients with the egg-butter-sugar mixture.
- Now add the milk and combine well. Thereafter, add the remaining dry ingredients and combine everything well. (Make sure you do not over mix the batter).
- Pour the batter into the greased moulds.
- Bake in the oven for 15- 20 minutes or until the skewers come out clean.
- Let it cool to room temperature. Serve with your favourite icing.
TIPS: You can decorate the cupcakes with vanilla icing, chocolate icing, whipped cream icing or simply frost them with Nutella and use sprinklers and decorations to make them look pretty. I’ll be posting different icing recipes and decorations in my upcoming posts. Stay tuned.
