Lagan-Nu-Custard is a Parsi dessert. Lagan-Nu-Custard essentially means 'wedding custard'. This is made with simple ingredients like milk, eggs, butter and nut. Creamy, sweet, caramelized and garnished with nuts and raisins, this baked custard is served traditionally at Parsi weddings and it is a great indulgent weekend treat too.
INGREDIENTS :
1. 1 litre full cream milk
2. 1 tin condensed milk
3. 200 gms fresh cream
4. 4 eggs
5. 2 tsp vanilla essence
6. 2 tbsp almonds (blanched, sliced )
7. 2 tbsp raisins
8. 1 tsp cardamom and nutmeg powder
METHOD:
1. Boil milk till slightly thick. Add condensed milk and stir. Remove when slightly thick.
2. Add vanilla essence and cardamom and nutmeg powder. Stir well.
3. Beat cream very lightly and add to the milk.
4. Cool the milk completely.
5. Beat the eggs and pour into the mixture and mix. Add the almonds and raisins.
6. Preheat oven at 180 degrees Celsius.
7. Pour into a buttered dish and bake in a moderate oven for 20-30 minutes. Lower heat and bake in a slow oven till light brown in colour.
TIPS: Serve hot or cold. I usually serve it with vanilla ice cream.
