INGREDIENTS:
■For the brownie base:
- All-purpose flour - 1/4th cup
- Chocolate chips- 1.5 tablespoons
- White chocolate chips - 1/2 tablespoons
- Coffee powder - 1/2 teaspoon
- Butter- 1/4 cup
- Powdered brown sugar – 1/4th cup.
- All-purpose flour - 1 cup
- butter - 1/2 cup
- Powdered sugar - 1/2 cup
- Egg- 1
- Yogurt- 1/4th cup
- Whipped cream - 1.5 tbsp (optional)
- Baking soda- 1/2 tsp
- Baking powder- 1/2 tsp
- Milk- 3.5 Tbsp
- Vanilla extract- 1 tsp
METHOD:
- Start the process of preheating the oven at 180°C. While the oven is being preheated, follow these steps for the brownie base.
- Pour a little bit of water in a microwave safe bowl and add in the dark chocolate and white chocolate chips. Heat it until it melts and is smooth.
- After it's smooth enough add the egg and whisk. Add vanilla extract, whisk again.
- In a separate bowl, add the flour,sugar and coffee powder and mix it. Make sure the powdered mixture is lump free.
- With an electric whisker, whisk the butter till its soft and shiny.
- Add the chocolate mixture into the butter and mix. Then add the flour-sugar-coffee mixture into the bowl and whisk till there's no lump. Add the vanilla essence and whisk.
- Now pour it in a lined and buttered cake loaf pan or a cake loaf silicon mould (preferable) and bake for 15 minutes.
- Now its time to make the cake batter while the brownie is in the oven. Shift all-purpose flour and baking powder in a bowl, keep aside.
- In another bowl take the yogurt and mix it with baking soda and keep aside. It will become frothy and have bubbles within minutes.
- Now in a seperate bowl cream butter and sugar. After the butter and sugar mixture is nice and creamy then add in the egg and whisk well. Then, add the vanilla essence.
- Add the flour mixture into the mixture which we made in step 3 in 3 batches. Whisk. Now add milk and the whipped cream (if you are using). Whisk well to form a lump free batter.
- By this time the brownie must be baked. So take out the brownie and pour the cake butter on top of the brownie base in the cake loaf pan. Smoothen the top of the cake batter with a spatula and bake again for 25 minutes at 160°C.
- After 25 minutes check if the cake is baked perfectly by piercing a toothpick in the centre of the cake. If the toothpick comes out clean, your cake is done.
