Strawberries covered in chocolate are the classic example of the interaction of two very different flavours; the tartness of strawberries and the sweetness of chocolate. These little treats can be enjoyed on any day of the year but during Christmas, I give them a festive makeover. I have been making these peppermint chocolate covered strawberries for the past two years and they have never done time in my refrigerator, they are gone as soon as the chocolate is tempered but can you blame my family? These delicious little treats can be given as gifts or can be enjoyed on Christmas morning while opening presents.
INGREDIENTS:
1. 12 strawberries;
2. 120 grams of dark chocolate;
3. 2 drops of peppermint oil/ 2 crushed peppermint candies
METHOD:
1. Melt the chocolate over a double boiler or use a microwave if you want, in case of a microwave, do not heat the chocolate for more than two and move the chocolate around every 30 seconds;
2. When the chocolate is melted and ready, add in the peppermint oil or the candy; mix well.
3. When mixed, hold the stem of the one strawberry and dip it in the chocolate, completely or partially; repeat with all strawberries, one at a time.
4. Lay the strawberries out on a parchment paper and freeze in the blast freezer for at least minutes or until completely set.
5. Voila! Serve cold!
TIPS: Don't add more than two drops of peppermint oil or more than two candies, doing the contrary will sabotage the flavour and will destroy the dish completely.
