This recipe is inspired from Martha Stewarts’ “Soft Chewy Chocolate Chip Cookies” 3-steps recipe. I love cookies and they are so easy to make at home. They take less than 20 minutes to make and I make about 3 dozen at a time. The recipe yields about 3-4 dozen of delicious cookies. The cookies can be stored in airtight containers for up to 1-2 weeks. You can carry these to work or school in lunch boxes and enjoy them with warm coffee, tea or milk! These are perfect little gifts to wrap up in cute goodie bags and present on Christmas, birthdays or any special occasion! Try it out, you won’t be disappointed!
INGREDIENTS:
1. 300g all-purpose flour
2. ½ tsp baking soda
3. 200 g butter, unsalted at room temperature ( 2 sticks)
4. 100 g granulated sugar
5. 200 g brown sugar
6. 1 tsp salt
7. 2 tsp vanilla extract
8. 2 large eggs
9. 2 cups or about 400 g of chocolate chips (dark or milk)
METHOD:
1. Preheat the oven to 180 degrees Celsius and prepare a tray with baking paper.
2. In a bowl, mix the flour, baking soda and salt and keep aside.
3. Combine butter with both sugars in another bowl and whisk till fluffy. (You can do it faster using an electric mixer). Add vanilla and eggs and beat until combined well. Add the flour mixture slowly to form firm enough dough to shape into cookies. (Use extra flour if the mixture is too runny.) Add in the chocolate chips.
4. Make balls of dough about the size and width of a tablespoon and place on the baking tray.
5. Bake for 10 minutes or till they turn golden brown. Note: They must have a golden brown tinge on the edges but must still remain soft in the centre.
TIPS: In case you don’t have chocolate chips, take a slab or dark or milk chocolate and cut it into small chunks and use.
