Phirni is a traditional Indian dessert- sweet, delicious and heavenly- beautiful creamy from North India. Kashmiri’s like to have their Phirni with an addition of Semolina. This is the perfect dish to make at home for any Indian festival- Durga Puja or Diwali or you could serve it for dessert at your next party!
INGREDIENTS:
1. Semolina (Rava)- 1 cup /25 gm (soaked in water for 1 hour)
2. Milk - 1 l liter
3. Condensed Milk - 1 cup
4. Sugar - 50 gm
5. Green Cardamom Powder - 1/2 tsp
6. Saffron – a few strands
7. Cashew nuts - 3 tbsp, finely chopped
METHOD:
1. In a pan, first boil the milk at low heat for 15 minutes.
2. Add the condensed milk, green cardamom powder, semolina and saffron and mix well. Cook for 5 minutes and add the sugar, continuously keep stirring till the mixture reaches a nice thick consistency. Once it reaches a nice thickness, take off the heat.
3. While the Phirni mixture is hot pour into terracotta bowls or any serving bowl of your choice.
4. Garnish with finely chopped cashew nuts.
5. Let the phirni come to room temperature and then refrigerator for 2 hours or until serving time.
6. Serve cold or hot as per your choice.
TIPS: Instead of cashew nuts you may also use sliced Pistachios or blanched, sliced almonds.
