I love chocolate mousse! It is probably my favourite dessert. I came up with this eggless, gelatin free chocolate mousse cake recipe for my best friend’s 22nd birthday. He absolutely loved it! It takes very little time to prepare and it takes a few hours to set in the refrigerator. It involves no baking whatsoever, so if you want a delicious cake and at the same time want to avoid using the oven, this is THE cake to make. The only thing you need to keep in mind while making this dish is patience, it takes about 4-5 hours to set! So please resist yourself from the temptation of digging into the chocolaty cake before it sets completely!
INGREDIENTS:
For the base:
1. 175 g chocolate Oreo cookies
2. 1 stick butter, melted
For the mousse:
1. 150 g dark or milk chocolate, chopped
2. ½ cup butter
3. 100 ml heavy cream
METHOD:
1. Put the Oreo Cookies in a zip lock pouch and crush the cookies into crumbs using a rolling pin.
2. Add the melted butter and combine it well with the cookies.
3. Now evenly spread the mixture on the base of a 6 inch cake pan. Keep in the fridge to set while you make the mousse mixture.
4. For the mousse, melt the chocolate and butter on a double boiler till smooth. Once melted, set aside to cool.
5. In a bowl, whip the cream till hard peaks appear.
6. Once the chocolate mixture has cooled (cooled enough to place your finger in and not burn it) fold in the whipped cream slowly till well combined.
7. Pour the mousse mixture over the cookie base.
8. Set the cake for 4 hours at least.
9. Garnish with assorted nuts or strawberries and serve.
TIPS: I used the cake pans which have a detachable base so that it is easier to pop up the mousse mixture when set.
