Zoodles or Zucchini Noodles are a great way to avoid carbs. Zoodles are really easy to make. If you have a zucchini pasta maker, then nothing like it! Otherwise, you can use a potato peeler to make thin strips of zucchini. The pesto sauce adds so much flavour to this otherwise, easy and simple dish. You can make the pesto at home by following the easy steps given below. I added prawns to the dish, but you may leave them out and make a delicious vegetarian version of this dish. The dish also uses nutritional yeast, you may or may not use it. You can buy the same online. This dish takes less than 15 minutes and it is really healthy so next time in stead of making pasta or regular noodles, try this out!
INGREDIENTS:
1.Zucchini -1, cut into strips or zoodles
2.Button mushrooms - 6
3.Cherry tomato- 4 to 5
4.Nutritional yeast (optional) - 2 tsp
5.Parmesan- 1 tbsp
6. 10-12 prawns, washed and cleaned
For the pesto sauce:
1.Basil- 2 handful
2.Pine nuts or walnuts - a handful
3.Olive oil- 2 tbsp
4.Garlic- 5 to 6 big cloves
5.Parmesan- 2 tbsp
METHOD:
1. For the pesto, put the basil, walnuts/pine nuts , garlic , olive oil , Parmesan and a quarter tsp salt in a grinder and make a semi smooth pesto sauce out of it.
2. In a pan, heat oil, and lightly saute the prawns and leave aside once done.
3. In another pan or the same, heat it and drizzle a bit of olive oil in it.
4. Add the zucchini strips and 3 heaped tbs of pesto. Let it cook for exactly 30 seconds.
5. Add chopped mushrooms and whole cherry tomatoes and nutritional yeast (optional) and cook for a minute . Then add the sauted prawns and mix everything well.
7.Add Parmesan and a little salt if needed (since Parmesan is already salty) and mix well.
8.Serve hot.
