INGREDIENTS:
- 4 eggs
- Lettuce (about 100 g)
- 5 tbsp Apple Cider Vinegar
- 1 tsp mustard
- 1 tsp olive oil
- Salt to taste
- Black pepper to taste
- Other vegetables (optional- I added capsicum and tomato)
METHOD:
- Hard boil the eggs. Let it cool completely before peeling.
- In a large bowl, tear the lettuce leaves into bite sizes with your hands gently. Add the other vegetables, if you are using them.
- Slice the eggs and add them.
- In a small bowl prepare the dressing by mixing vinegar, olive oil, mustard, salt and pepper.
- Add this dressing to the lettuce and eggs and toss well and serve.
