Often after a hard day at college or office we are too exhausted to cook something for dinner. At times like these, this chopped Greek salad with chicken is a savior! It is healthy, easy to make and acts as a substantial main course!
Use leftover chicken, store-roasted chicken or quickly poach a couple of boneless, skinless chicken breasts while you prepare the rest of the salad. This is enough for 4 adults.
INGREDIENTS:
· 1/3 CUP RED WINE VINEGAR
· 2 TABLESPOONS EXTRA VIRGIN OLIVE OIL
· 1 TABLESPOON OREGANO
· 1 TEASPOON GARLIC POWDER
· 1/4 TEASPOON SALT
· 1/4 TEASPOON PEPPER
· 6 CUPS CHOPPED LETTUCE
· 2 ½ CUPS CHOPPED COOKED CHICKEN
· 2 MEDIUM CHOPPED TOMATOES
· 1 MEDIUM CHOPPED CUCUMBER
· 1/2 CUP FINELY CHOPPED RED ONION
· 1/2 CUP SLICED BLACK OLIVES
· 1/2 CUP CRUMBLED FETA CHEESE (Those who are too calorie conscious, they can avoid this)
· ANY VEGETABLE THAT YOU HAVE AT HOME SUCH AS BROCCOLI, BELL PEPPER (or any thing of your choice can be chopped and added)
METHOD:
· Whisk vinegar, olive oil, oregano, garlic powder, salt and pepper in a large bowl.
· If you do not have cooked chicken at home then put the boneless, skinless chicken breasts in a saucepan, add chicken broth (or lightly salted water if you do not have chicken broth), cover and bring it to boil. Reduce the heat to low, simmer gently until chicken is cooked.
· Add the rest of the ingredients along with the chopped chicken to the whisked vinegar and oil mixture and toss it to coat.
TIPS: For those who have attained legal drinking age, a glass of red wine complements this salad beautifully. Red wine contains resveratrol, a powerful antioxidant compound, which protects your heart and arteries against the effects of saturated fat in your diet, so drinking one or two glasses of red wine a day can help protect your heart.
