A simple yet nutritious breakfast must consist of eggs and milk, or so people say. Why not both in the same plate? There are many ways of making Scrambled Eggs, there are often fights held as to whose Scrambled Eggs are better (HIMYM reference). This is a really simple and easy method to make soft and fluffy eggs, cooked to perfection, making breakfast all the more better.
INGREDIENTS:
1. 2 eggs
2. 1 cup milk
3. Crushed pepper
4. Salt
5. Olive oil/ butter
6. Oregano and basil seasoning (optional)
METHOD:
1. Break the eggs in a bowl and whisk until frothy.
2. Add the salt and pepper to taste and whisk again.
3. Add the milk and whisk till lightly frothy. Make sure the milk is cold.
4. Heat a pan with oil or butter. If using butter, be careful not to burn it, the technique is to lower the heat and constantly stir it.
5. Once the pan is hot, lower the heat, add the egg-milk mixture and make sure to constantly stir it, not to make big solid pieces.
6. When the eggs have taken on a solid form, take them off the heat as soon as you see some of them turning a light shade of brown. It usually happens 6-7 minutes after adding the eggs on low flame. Do not let them brown as that means your eggs are over cooked.
7. Eggs continue cooking even after taken off heat so be careful and notice the change in colour.
8. Add seasoning of your choice and if you want, you may also add fried bacon or sausages or salami. Enjoy light and fluffy Scrambled Eggs for breakfast!
TIPS:
The amount of milk being added is important. Less milk means the eggs will be more chewy and less soft and will cook faster.
Adding more milk will make the mixture runny and give it a wet texture and make the eggs softer but it will tend to break apart.
