A crispy, traditional delicacy in India, everyone loves to eat Kachuri. This kachuri is stuffed with mutton keema. It is really easy to prepare although it might seem time consuming, but trust me once you bite into these, the smile in your face will be worth it. This has been broken into 3 steps- preparing the keema, making the dough and assembling the kachuri- with pictorial guides at each step.
1, Preparing the mutton keema
INGREDIENTS:
Mutton keema - 300 gms
Mustard oil - 3 tbsp
Salt to taste
Sugar - 1/2 tsp
Red chilli powder - 1 tsp
Turmeric - 1/2 tsp
Garam masala - 1 tsp
Onion - 1 longer (finely chopped)
Garlic/ginger paste - 2 tsp
Tomato - 1 medium (finely chopped)
METHOD:
Heat the oil in a pan and add onion chopped , garlic , ginger and sugar cook it until it has a brown color . Now add red chilli powder , turmeric and tomato chopped mix everything well and cook for 2-3 minutes in high flame .
Then add mutton keema and keep stirring them and cover the pan and cook it until the oil is coming out, in medium flame .
Now add salt to taste and garam masala mix well and cook for 2 minutes .
Add 1 cup of water and mix them well and put everything in a pressure cooker and cover it cook until 3-4 whistle and let the keema cook completely .
Now rest it keep aside completely cool down .

Plain flour - 300 gms
Salt -1/2 tsp
White oil -3 tbdp
Cooking soda - 1 pinch
White oil - 3 cup (Extra for deep fry Kachuris)
METHOD:
Take a big bowl and put the salt , oil and soda into the plain flour and mix it properly using your hands and put some water in the plain flour mixture and make it a very soft dough .
Don't press the dough with too much force.
Cover it with a lid for 15-20 minutes .

First make small round balls of the dough in the size of a lemon . Take one ball of dough and roll it and make it like a round small roti .

Put 1 tbsp stuffing mutton keema.
Close the stuffing from all the sides and press it .

Once they are ready, deep to fry them in the hot oil until they gets a golden colour, in medium flame .
Serve it with your favourite chutney or sauce .
