We love quick fix, no fuss breakfast recipes. This breakfast sandwich recipe is so tasty and so easy to put together you will love making it for breakfast or a quick weekday dinner too!
INGREDIENTS:
METHOD:
1. Chop the vegetables into thin slices and keep aside.
2. Boil the egg in plenty of boiling water for about 10 minutes. Cool and Peel. Chop the boiled egg into slices gently.
3. Take 1 slice of bread. Spread some butter on the inside of the bread slice.
4. Layers the veggies (onion, tomato and capsicum).
5. Then top with a layer of sliced egg.
6. Sprinkle the finely chopped chillies, salt and pepper.
7. Spread butter on the insides of the other slice of bread and cover.
8. Spread butter on a griddle or tava and slowly place the sandwich on the hot griddle. Toast well until golden brown. Carefully and slowly flip over and toast the other side until golden brown.
9. Cut the sandwich into half and serve hot with ketchup or plain.
TIPS: To further reduce time, you can make the fillings and assemble the bread and pop the sandwiches into an infrared sandwich oven!

- Bread slices – 2
- Hard boiled Egg – 1
- Butter - 1 tsp
- 1/2 Tomato - Wash and Cut into Slices
- 1/2 Onion - Peel, Wash and Cut into slices
- Capsicum or Bell Pepper - Wash and cut 2 thick rings
- Salt to taste
- 1 Green chilli - Wash and chop fine
- Pepper powder
