Enjoy this beautiful broth while slurping on the noodles!
INGREDIENTS:
- 1 packet noodles , boiled (50g)
- 4-5 mushrooms, finely chopped
- 1 carrot, finely chopped into long strips
- 1 Green bell pepper cut into strips
- 4-5 cabbage leaves finely chopped
- 2-3 cloves of garlic
- 5 cups vegetable stock
- 1 tsp vinegar
- Salt and pepper to taste
- Oil
METHOD:
- Heat oil in a pan, Add the garlic and saute.
- Add the mushrooms, carrot, bell pepper, cabbage and stir fry. Add salt and pepper and season well.
- Meanwhile bring a pot of vegetable stock to boil. Add the vegetables. Add a tsp of vinegar. Let it simmer for 4-5 minutes. Drop the boiled noodles and stir everything well. Season with salt.
- Once you've reached desired thickness of the soup, take it off the heat. Serve hot.
TIPS: You may use vegetable stock cubes too.
