Wintry times call for some hot favorites and mushroom is something loved by all. So, why not indulge in some delicious and soulful mushroom and peas soup!
INGREDIENTS:
1. 5-6 Button Mushrooms
2. 1/2 cup Peas
3. 2tbsp Butter
4. 2 Onions, sliced
5. 4 cloves of Garlic, chopped
6. 1/2 inch Ginger
7. 1 cup Milk
8. A pinch of thyme
9. Pepper, to taste
10. Salt, to taste
11. Chili flakes, to taste
12. 1 Bay leaf
METHOD:
1. Clean the mushrooms properly and then slice them thinly.
2. In a pan, take butter and add the onions, garlic, ginger and the bay leaf.
3. When the onion turns translucent, add the mushrooms and peas and sauté for a while.
4. To the mixture, add a cup of water and allow the mushrooms and the peas to become tender.
5. When the mushroom gets cooked, separate the water and allow the mixture of mushroom, onion, ginger and garlic to cool.
6. Take out the bay leaf from the mixture and blend it in a mixer grinder.
7. Add the milk to the mixture and blend it till smooth.
8. Pour the mixture again into the pan and cook for a few minutes. Add the water that was separated before.
9. Add a pinch of thyme to the soup and season it according to taste.
10. Serve the soup hot!
