This is a lazy one pot soup, perfect for dinner after a long day without compromising on your diet. So dump in everything in a single pot and you never will buy those artificially flavoured ready meals again.
INGREDIENTS:
For Soup :
3 tablespoons olive oil
1 minced onion (about 1 medium onion)
1/2 cup Tomato Paste
1⁄2 cup chopped Onions
1⁄2 cup chopped mushroom
1⁄4 cup chopped celery
4 cloves minced garlic
4-5 cups vegetable broth ( or chicken broth if you wish to)
1 cup boiled red kidney beans
1 cup diced tomatoes
1⁄2 cup carrot (julienned or shredded)
2 tablespoons minced fresh parsley
1 1⁄2 teaspoons dried oregano
1⁄2 teaspoon dried basil
1⁄4 teaspoon dried thyme
1⁄2 cup any small shell pasta
Salt & Pepper for seasoning.
METHOD:
Heat three tablespoons of olive oil over medium heat in a large pot.
Saute onion, celery, garlic, mushroom, tomato paste and carrots in the oil for 5 minutes or until onions begin to turn translucent.
Add vegetable broth to pot, tomatoes, beans and spices.
Bring soup to a boil, then reduce heat and allow to simmer for 10 minutes.
Add pasta and cook for an additional 20 minutes or until desired consistency.
Serve hot.
TIPS: Goes really well with Chilli Cheese Toast !
