This is a unique, delicious kebab which can kick-butt any modern take on kebabs served at restaurants. Try it out!
INGREDIENTS:
METHOD:
1. Cut the panner into bite size pieces in sets of 2 identical pieces.
2. Prepare the pesto: In a food processor add almonds, basil, garlic, salt , pepper and olive oil. Blend the mixture. I prefer it coarse, add olive oil for a more finer texture. Use as much as required and store the remaining in an airtight container and refrigerate it for upto 10 days. (NOTE: You can also buy store bought Pesto)
3. Now take the pesto and put it on the surface of a paneer piece. Now sandwich this with another paneer on top.
4. Prepare the batter: Take gram flour, 1 tsp of red chilli powder, 1/2 tsp of turmeric and mix. Dissolve this with water (add little at a time) and form a thick batter.
5. Dip the paneer sandwiches in the the batter.
6. On a pan or a grilling pan put oil. Now gently put the paneer coated in batter and fry on all 4 sides. Make sure you don't burn it.
7. Serve hot!
TIPS: Serve with mint chutney and lime.
