Serves: 4-6 pieces
This is a new twist to the classic Dahi Vada using bread instead of the usual urad daal! This is so simple to make, with most of the ingredients almost always available at home. I came up with this one day while talking to my cousin who lives in the United States. It is really hard getting all the classic ingredients so I came up with using milk bread, and guess what? It tasted really, really good! This is tasty, health and low on calorie. Make these tasty light vadas from scratch at home and top them off with the sweet yogurt mix! This recipe serves 2 adults.
INGREDIENTS:
1. 10 slices milk bread
2. 250g yogurt
3. 1 tsp cumin or jeera powder
4. 1 tsp red chili powder
5. 1 tsp rock salt
6. 1 tsp chaat masala (optional)
7. 4 tbsp Kajur Imli ki chutney
8. A handful of coriander leaves, chopped finely
9. Bhujia for garnish (optional)
10. Salt and sugar to taste
11. Oil to deep fry
METHOD:
1. Remove the brown sides from all the bread slices and soak these in a bowl of cold water for 5-10 minutes.
2. Squeeze out the water and mould them into round balls with your hands and palms.
3. Heat oil in a pan. Fry these till they take a beautiful brown hue. Leave aside to cool.
4. In a bowl place the yogurt, mix in salt and sugar as per taste. Next mix in cumin powder, red chili powder and rock salt. Next add in 3 tbsp of chutney. Mix well until combined.
5. Place the dahi vada on a plate or serving bowl. Prick each vada on the surface with a toothpick so that the dahi mixture seeps in. Now pour the yogurt mixture evenly over the vadas.
6. Spread coriander leaves and the remaining chutney over the vadas. Garnish with bhujia and serve.
TIPS: To reduce more on calories, you may use brown bread though I prefer milk bread!
** Readers who love a bit more softened dahi vadas: After frying the vadas absorb the oil using kitchen tissues and then soak them in warm water for 10 minutes. Then squeeze them lightly so that all the water comes out. Then repeat the steps as mentioned.
