Quick and easy South Indian Rice recipe .
INGREDIENTS:
Rice - 3 cup (water soak the rice 1 hours)
Urad Dal - 1 tsp (water soak 3 hours)
Channa Dal (gram dal) - 1 tsp (water soak 3 hours)
Lemon juice - 2 full pieces (Indian lemon)
Turmeric powder - 1/2 tsp
Salt to taste
White oil - 2 tbsp
Mustard seeds - 1/2 tsp
Peanuts - 3 tbsp
Dry Red Chilli - 3 pieces
Green chilli - 4 pieces chopped (optional)
Asafoetida - 1 pinch
Curry leaves - 1 sprig
METHOD:
Heat water until it have bubbles . Then add 1 tsp oil and salt. Add rice and cook the rice. Don't over cook the rice .
Squeeze in the lemon juice .
Now heat oil in a pan and the oil is hot add the mustard seeds . Once the mustard seeds start spluttering .
Add the split channa dal and urad dal and let them cook for a few seconds .
Then add the peanuts and cook until they are slightly brown in color .
Now add the dry chilli , asafoetida , turmeric , green chilli chopped (optional) , curry leaves .
Give a quick stir and add boil rice , salt and the lemon juice and the switch off the flame and mix well give it a nice toss .
The lemon rice is ready to be served .
TIPS: Serve the lemon rice with any type of South Indian Curry .
