INGREDIENTS:
- Cooked basmati rice
- Finely chopped vegetables (I used carrots, beans and spring onion)
- Finely chopped garlic
- Basil Leaves
- Egg
- Soya Sauce
- Red Chilli Sauce
- Vinegar
- Salt and pepper to taste
- Oil
- Spring onion for garnish
METHOD:
- In a wok, heat oil. Crack the egg in a small bowl and gently pour it into the wok. Constantly stir the egg in the wok till they break down into small pieces. Cook them till they turn from white to yellow and add salt and pepper. Keep aside.
- Add oil to the wok. Add the garlic and saute. Add chopped vegetables and cook them through. Add red chilli sauce to get some punch to the vegetables. Add the basil leaves and mix well for about 30 seconds. Season with salt and pepper.
- Now add in the cooked rice. Add soy sauce and vinegar and combine the rice with the vegetables.
- Once well combined add the egg and give it a good stir.
- Take off the heat. Garnish with spring onions and serve hot!
