INGREDIENTS:
Baby Potatoes - 1 kg
Bay leaves - 2 pieces
Dry chilli - 1 piece
Whole cumin seeds - 1/2 tsp
Mustard oil 3 tbsp
Salt to taste
Sugar - 1/2 tsp (optional)
Turmaric - 1 tsp
Cumin seeds powder - 1 tsp
Red chilli powder - 1 tsp
Kashmiri chilli powder - 1 tbsp
Asafoetida - 1/2 tsp
Garam masala powder - 1 tsp
Ginger paste - 2 tbsp
Tomato taste - 1 medium size
Green chillis - 3 pieces (optional)
Coriander leaves few finely chopped for garnishing
METHOD:
Boil the potatoes in pressure cooker 4-5 whistle.
Now let it rest. Peel them off once completely cool.
Heat the oil in a pan add whole cumin seeds , bay leaves and dry chilli.
Add boiled potatoes and shallow fry them .
Then add ginger paste , tomato paste , asafoetida, salt to taste , sugar , cumin powder , turmeric , red chilli powder and kashmiri chilli powder, mix them well and cook it comes out oil .
Now add (if required) water and mix well and cover the pan and cook it for 4-5 on low flame .
Then add garom masala and mix well .
Garnish with Coriander leaves
TIPS: Serve with pulao, luchi, kachuri, roti, parantha, etc.
