INGREDIENTS:
- 250g Salmon fillet
- Juice of 1 lime
- 2 red chillies, finely chopped
- 2 kaffir lime leaves
- 2 lemon grass stems, crushed
- 2 tbsp finely chopped coriander leaves
- 2 tbsp Taste of Madness Red Curry Paste
- Olive oil for brushing
METHOD:
- Marinate the salmon in lime juice, chillies, kaffir lime leaves, crushed lemon grass for at least 1 hour. I marinated my fillet overnight.
- Brush a baking bowl with olive oil. Squeeze out the excess lime juice from the salmon and place it on the baking dish.
- Transfer the chillies, lemon grass and kaffir lime leaves onto the dish. Rub the thai red curry paste gently on the fish.
- Preheat the oven at 200 deg C.
- Wrap the fish in aluminum foil paper and bake for 8-15 minutes depending on the thickness of your fish.
- Serve hot with thai style fried rice!
TIPS: Don't over-cook the fish! Ensure you set the time correctly seeing the thickness of your fish cut. Mine took 15 minutes.
