- 8-10 Scallops, thawed (Try out Big Sams SeaFood)
- 3 cloves of garlic finely chopped
- 1 cup parsley leaves, finely chopped
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and Pepper
METHOD:
- Pat the scallops dry. Season with salt and pepper.
- In a deep bottomed pan, heat olive oil. Place butter and let it melt and blend into the olive oil.
- On medium heat, add garlic and saute.
- Add the scallops and half of the parsley. Cook the scallops for 60 seconds on each side.
- Take off the heat. Garnish with fresh parsley leaves and serve immediately.
TIPS: The perfectly cooked scallops are those with a nice sear on the surface and bottom while still cooked through and succulent in the middle. It takes between 30-90 seconds to cook depending upon it being fresh or de-frosted.
