INGREDIENTS:
Mutton - 500g
Mustard oil - 3 tbsp
Salt to taste
Yogurt - 100 g
Bay leaves - 2 pieces
Black cardamom - 1 piece
Cloves - 4 pieces
Cinnamon stick - 1" - 2 pieces
Mace- a few
Cumin seeds - 1/2 tsp
Black pepper powder - 1 tsp
Cumin powder - 1 tsp
Kashmiri chilli powder - 2 tbsp
Turmeric powder - 1/2 tsp
Garam Masala powder - 1 tsp
Saffron- a pinch
Hing (Asafoetida- a pinch
Fennel seeds powder - 1/2 tsp
Ginger paste - 1 tbsp
Garlic paste - 1 tbsp
Ghee - 1 tbsp
METHOD:
First heat the pressure cooker,then add mustard oil at high flame and wait until the oil comes to smoke.
Then add all whole spices (Bay leaves , Black cardamom , Cloves , Cinnamon stick ,Mace few ,Cumin seeds)
Then just pour the raw mutton pieces in to the oil. Fry the mutton pieces until the muttons' colour changes.
Add all Indian spices masala powder (cumin powder, hing ,black pepper powder, Kashmiri chilli powder, ginger and garlic paste) cook it for a few minutes, then add water and garam masala powder and ghee, cover the cooker and till you hear about 7-8 whistles!
