There are certain ingredients which are exotic and are not easily available in the market. I live in Kolkata, India and I do most of my ingredient shopping from New Market or Spencer’s or Gariahat Market.
There are so many ingredients that are not available here and I can’t help but substitute it with something similar to the element used in a particular recipe.
For instance, bottled lemon juice or mausambi or lemon extract can be used as a substitute for lemons. Similarly to substitute currants, I usually use raisins or de-seeded dates or other dried fruits like cranberries, cherries, blueberries, and so on.
